Toriden does things differently for their mizutaki, or chicken hot pot. Instead of serving it as a simple dish, it is elevated into a delicacy by offering the hot pot in an Omakase-style meal.
The chef curates your food journey through a multi-course meal for a memorable experience while keeping the Hakata tradition alive.
The proprietor, Hirokatsu Okutsu launched the first Toriden in Fukuoka on Kyushu island. Farm fresh chicken was used to prepare the broth by slowly boiling them for 6 hours.
This process breaks down the collagen which renders the broth white and delectable. If you are looking for a nutritious, collagen filled soup to help recover the firmness and elasticity of your skin, you’re at the right place.
To enjoy the mizutaki, start with a sip of the special soup before eating anything else. You should be able to taste a subtly sweet chicken flavor.
Then serve the boiled chicken with green onion and leek with their homemade tangy citrus ponzu sauce. The combination is appetizing and will whet your appetite for further things to come.
Next, add the special chicken meatballs. They are juicy and tender, added with minced chicken gizzard for an extra bite of flavor and texture. Follow by adding as much vegetables as you want to sweeten the broth even more.
If you feel there are too many steps to follow, don’t worry because all the cooking is done by the staff. You just need to sit back, relax and enjoy.
For a more filling meal, rice and egg can be added into the broth and stirred to make porridge. For those who don’t fancy having porridge, you can opt for ramen. Other ala carte items in the menu include sashimi, mentaiko, chicken tempura, Toriden Tamago (soft boiled egg shown earlier) and fried chicken.
FYI Toriden’s mizutaki courses are available in Ume (RM120), Take (RM150) and Matsu (RM180). All of them feature the same mizutaki and appetizer, but the more expensive options have additional dishes such as chicken tempura, mentaiko and dessert.
